Shane Delia made a delicious orange blossom egg custard with pear sorbet following his visit to spain on Shane Delia’s Moorish Spice Journey.

Shane says: “For me this dessert encapsulates all the flavours of Seville. I’ve added a touch of orange blossom water to the traditional flan mixture to give it a bit of a lift, but be warned – it’s super rich and sweet so a little goes a long way. While yuzu fruit are a Japanese citrus fruit, I find it works wonders in cutting through the sweetness of the custard.”
