Rachael Khoo makes a delicious smorgastarta savoury Swedish celebration cake on Rachel Khoo’s Cosmopolitan Cook.

The ingredients are:
Quick cured juniper salmon
300g piecevery fresh skinned salmon.

For the brine:
500ml water
70g coarsesalt
70 g caster sugar -1 tbsp juniper berries
1 medium raw beetroot
2mediumsized pickled beetroot (about 100g each).

To decorate:
1 large cucumber
5g dill
2 tbsp. salmon roe
1 organic unwaxed lemon.

For the horseradish cream:
3 tbsps horseradish cream
300 ml whipping cream
16 slices of Swedish flatbread (polarbrod) or a good quality sliced white bread from an 800g size loaf, crusts taken off.
